Find efi mount point:
mount -l | grep "boot"

This can be modified by editing `hardware-configuration.nix`
to have either `fileSystems."/boot"` or `fileSystems."/boot/efi"`

Running `sudo nixos-rebuild switch --flake .` in `~/nixdots`
will change the mount point (no reboot required).


Once we're here we can reinstall (hopefully)
